Drums of Heaven are Chicken Lollipops tossed in a spicy, salty, and sweet sauce. This is a “flavor bomb” kind of recipe. It is a well balanced sauce… spicy, salty, and sweet, everything works together to create this awesome flavor bomb. The sauce make the chicken more succulent.

This Drums of Heaven is a chicken lollipop recipe, which we tossed in perfectly balanced sweet and spicy sauces. It is actually made with chicken wings but you can also make it with drumsticks. So do definitely give it a try.
We use 10-12 pieces of chicken lollipop which are made from chicken wings. Wash them thoroughly, drain and keep aside.
In a large bowl add ginger garlic paste, pepper powder, chili powder, soy sauce, white vinegar, salt, chicken lollipops and mix it well together.
Marinade for 30 minutes.
In a large bowl add the ingredients under "Batter Ingredients" i.e egg, maida, corn flour, baking soda, salt, chili powder and well.
Drizzle some water and make it a thick batter. Combine all the ingredients very well.
Add the marinated chicken lollipop into this batter. Mix well. Chicken lollipops are ready to be deep fried.
Heat oil in a wok or kadhai. Add the battered lollipops one by one to the oil in such a way that the meat is at the bottom and the bone is on top (watch the video to see how I do it). Fry these on medium high heat till golden brown – approx 5-6 minutes. Remove from flame when the chicken is cooked and turned golden brown.
In another pan, pour 3tbsp oil and add ginger and garlic. Stir fry on high heat for a minute and add chopped onions. Keep stir frying till the onions soften.
After a few seconds, add pepper powder and chili powder. Combine them well.
Now its time to add the sauces. First add Red Chili sauce, tomato ketchup and soya sauce. Mix well.
Add sugar and again mix well. Now make a slurry by adding corn flour and water. Add this to the sauces. Allow it to simmer for a minute.
Add the fried chicken lollipops into the sauce and mix well.
Top it with chopped spring onions and serve.
Conclusion
Tips: You can use gram flour to fry the chicken instead of maida. Place the fried lollipops on a grill stand to prevent sogging. You can even double fry the lollipops for extra crispiness.
