Chicken is undoubtedly the favorite meat for kids and adults alike. Every non vegetarian person likes chicken in one form or the other. From fry to curry, roast to stew, pulao to biryani ,chicken holds a special place in everyone’s heart. Red Hot Kerala Chicken Fry has become our favorite chicken fry and its now our default recipe for all major occasions. We enjoy having this crispy Red Hot Kerala Chicken Fry with plain rice and curry, biryani or as just an appetizer.
This is a very simple recipe but the flavors and crispness is amazing. I am big fan of Lakshmi Nair ma’am and this recipe is from one of her vlogs.

Directions
The ingredients mentioned are all easily available at home. Please do give it a try and enjoy the chicken.
Clean and cut the chicken into big pieces. Drain off the water completely and keep aside.
Add all the ingredients mentioned above one after the other, except the oil. Try not to skip the ingredients mentioned.
Mix well for 5 minutes using your hands. Marinate for at least 2 hours and for best results marinate over night.
Heat oil, preferably coconut oil in a deep bottomed kadai or pan. When the oil is very hot, drop the chicken pieces one by one. Reduce the flame and cook the chicken in medium flame for 5 mints each side.
Last two minutes increase the flame to high to make the outer coating crisp. Drain the fried chicken into a tissue to remove the excess oil.
Our Red Hot Kerala Chicken Fry is ready to be served.
Have the Red Hot Kerala Chicken Fry with steamed rice and chicken curry.
Conclusion
While frying the chicken do not over crowd the kadai. Always use fresh ginger garlic paste for best results.
