This is a simple Kerala style Prawn Roast with fresh coconut bits. Prawn is always the favorite among all sea food lovers and we are no exception. Prawns shallow fried in little coconut oil with minimum spices and fresh coconut bits is definitely a crowd puller. Serve this kerala style prawn roast as a side dish or just as an appetizer. Do try this with rice and simple rasam or with any curry. The combination is deadly.

Prawns has many good benefits such as Vitamin E, Vitamin B12 and Omega 3 fatty acids. It also supports in building immune system and improves bone health. So do include sea food in your diet frequently.

Ingredients

    Directions

    This Prawn Roast is a super quick recipe and can be prepared within minutes excluding the cleaning part.

    Step1

    Clean and finely chop the onions, ginger, garlic, green chilies and curry leaves using chopper or by hand and keep them aside.

    Clean and devein the prawns and wash it thoroughly in running water. Also keep the coconut bits ready. If you do not have fresh coconut you can use dry coconut too. But the real taste you get is from fresh coconut.

    Next heat 2 tbsp of coconut oil in a deep pan or kadai. Once heated added the chopped onion mix and stir fry till the raw smell disappears. Keep the flame in medium while stirring.

    Now add all the dry spice powders and stir again continuously for 2 mins in low flame. Do not burn the masala.

    We can now add the prawns and stir in high flame for another minute.

    Next add the coconut bits into the pan and stir for 2 minutes in medium flame.

    Cover and cook for around 7-8 minutes in medium flame. After 8 minutes open the kadai and increase the flame and dry the excess water. The Prawn should be completely dry.

    Finally add salt to taste and 1/2 a teaspoon of fresh pepper powder to give an extra kick.

    Our Prawn Roast is ready to be served with hot steamed rice and rasam.

    Conclusion

    You can directly add the fresh coconut bits to the prawn or you can shallow fry the coconut separately and then add it to the prawns. Do not over cook the prawns as they would turn rubbery.
