Kerala Sardine Fish Fry or Mathi Fry / Chaala Varuthathu, is one of the most easiest recipe. This is a traditional sardine fish recipe / mathi fish recipe , that can be easily prepared and we can find in almost all Kerala restaurants and homes. Sardines / Mathi is a popular and favorite fish of Malayalis.
The Sardine fish / mathi meen is one of the tastiest and cheapest fish available in Kerala. But they are also one of the best sources of Omega 3 fatty acids, which reduces our triglycerides and cholesterol. Sardines are also rich in Vitamins and Minerals. The bones in the fish are rich in Calcium too.

Directions
For cleaning the fish, rub it with some rock salt and lime juice. Leave for 10 minutes. Wash it nicely with running water, by changing the water 2-3 times. Allow it to drain. This removes the bad odor of the fish.
Wash the cleaned fish nicely with running water for 2-3 times and then make 3-4 gashes on each side of the fish. Allow it to drain and keep aside.
Marinate the fish by mixing chilly powder, turmeric powder, pepper powder and salt.
Now add the lemon juice and a teaspoon of coconut oil.
Sprinkle little water to make a smooth paste. Then apply the masala paste on the fish and do make sure to rub the paste inside the fish's gashes. Marinate for 15 minutes.
Heat coconut oil in a frying pan and then put on the fish and shallow fry the fish on medium to low flame. Flip the fish carefully after 5- 6 minutes. Again repeat frying for 5 minutes in same temperature. Fry until both sides are brown and crisp. Remove from flame and keep them aside.
In the same pan add finely sliced onions and curry leaves.
Sauté them until they turn golden brown. Then add the fried Sardines into the pan and continue roasting them in low flame for couple of minutes.
Switch off and serve immediately with hot rice.
Conclusion
Use coconut oil for frying the fish to get the authentic taste and flavor.
