The chicken legs should always be marinated in the refrigerator for at least an hour to get the flavors infused into the chicken. If there is little time to cook, then reduce the marination time to half an hour and but for best results marinate over night so that all the masalas get perfectly absorbed to the chicken pieces.
Wash the chicken with salt and turmeric, this will help in removing any odor, drain excess water, and pat dry them using kitchen tissue. Now with the help of a knife cut deep gashes into each chicken leg and keep them in a bowl.
Add ginger garlic paste, chili powder and pepper powder.
Now its time to add salt, garam masala powder and turmeric powder.
Next add juice of one lemon, tomato sauce and chili sauce.
Then add all purpose flour or maida, corn flour and egg.
Finally add curd and fresh cream. Mix them thoroughly. Make sure each chicken piece is well covered with masala paste.
Cover and leave it in the refrigerator for an hour. For best results you can marinate it overnight if you have time.
Heat sufficient oil in a large kadai or pan. Once the oil is hot enough, reduce the flame to medium and fry the chicken in batches. Cook the chicken legs for 4-5 minutes on medium flame. Flip the chicken pieces and continue to cook the other side too for 4-5 minutes on medium flame.
When both sides are gold brown, remove it from oil and place on kitchen towel/tissue to remove excess oil. Repeat the same process and fry the remaining chicken drumsticks. Serve immediately.
Conclusion
Make sure the oil is hot enough before frying or else the chicken pieces will soak up oil. Do not overcrowd the pan.
