Spicy Pepper Chicken Recipe is very famous in most of the restaurants and is loved by everyone irrespective of regions. This pepper chicken recipe is also called Chicken Kali Mirch in North India and Kozhi Milagu Varuval in Tamil Nadu.
In this Spicy Pepper Chicken Recipe, pepper plays a major role in providing the hot taste needed and leave you wanting for more. It goes well with most of the main dish and it is a perfect dish for cold and gloomy weather. Though this recipe is Pepper Chicken dry, it is also popular in gravy form.
Pepper Chicken is an easy and quick chicken dry roast. It is the perfect side dish with plain rice, chapati, naan and many more. The process of cooking this recipe is much simpler as there is no need for any fancy ingredients. It is prepared with home made pepper masala which is added with chicken and cooked. For making this wonderful recipe I have used cast iron kadai. The dish not only turned out super delicious but healthy too. So let's get started.
To make the pepper masala, dry-roast the spices under *For Roasting & Grinding over a gentle heat until they turn a shade darker and fragrant.
Cool, then grind to a coarse powder. Keep them aside.
Clean and cut chicken into medium sized pieces. Chop the onions and keep the ginger garlic paste ready.
Heat oil in a iron kadai and then add shah jeera and the dry red chillies.
After few seconds add the chopped onions and sauté well. When the onions start turning brown, add the ginger garlic paste. Continue sautéing the onions until they turn brown. Then add the turmeric powder and stir again.
Now add the chicken pieces and mix well. Cover and cook for 5 minutes in low medium flame. Then again stir the chicken and cover and cook for 5-7 minutes.
Then add the ground spice mix along with salt and stir well for couple of minutes. Cover and cook the chicken until its well cooked.
Finally increase the flame to medium high and add few curry leaves and coriander leaves. Continue to fry the chicken for 2-3 minutes until all the excess water is evaporated and the masala is well coated on the chicken.
Remove from the heat and check the seasoning. Spicy Pepper Chicken is ready to be served.
Conclusion
You can use the pepper powder, instead of using the freshly crushed ones, but the taste of Pepper chicken will be the best when the pepper is freshly crushed.
