Potato is a very versatile vegetable and can be used to prepare many dishes like curries, pulao, snacks and stir fry. This spicy and delicious Potato fry is a great side for South Indian Lunch. It is an easy-to-make delicious dish and is cooked using common ingredients that you can easily find in your kitchen. This goes well with almost any curry, rice or chapati.
This recipe can be made real quick and its one of my kids favorite side. One of the best combination that I can think of is spicy potato fry with South Indian Rasam and Appalam. Though it might sound very simple, the satisfaction that you get at the end of the meal is incomparable.

This spicy fried potato will be a great addition to your meal. Just serve them as a side as they go very well with rice and roti. Simple Dal and Potato fry is more than enough for a complete lunch.
Peel and chop potatoes into 1 inch cubes. Place them in a bowl of water for 10 to 15 minutes. The potatoes should be completely immersed in the water.
Heat a heavy thick bottomed pan or a heavy kadai. Add 2 tablespoons oil. Once the oil is hot enough temper it with mustard seeds, split urad dal, channa dal, whole red chilli and hing . Add curry leaves, garlic and sauté it.
Keep the flame low and then add the above spice powders except for garam masala powder and salt. Keep stirring for 2 minutes.
Next add the drained potatoes and keep stirring in meduim to high heat for 4-5 minutes.
Cover and cook the potatoes till they are just cooked. Take care not to over cook them as they would turn mushy. Add the garam masala and salt at this stage.
Keep stirring the potatoes in medium high flame until they are roasted well and well coated with the masala.
Our simple and spicy potato fry is ready to be served!! Enjoy with hot rice.
