Sadya Style Beetroot Thoran is a simple and delicious Kerala stir fry recipe. It is a dry and mildly spiced dish made with beetroot, onion and coconut. Beetroot Thoran is vegan and gluten-free. We usually serve it with rice as a dry side dish. Beetroot thoran also features in Onam Sadya or other Kerala style feasts. Thoran can be made with different available vegetables with small variations.
Beetroot thoran is attractive, delicious, easy to make and has immense health benefits. Kids will love its sweet taste and attractive color. It is also known as Beetroot Upperi in some parts of Kerala. In our family we usually enjoy it with Rice and Sambar. You can also have it with Chappati.

Directions
You can either chop the beetroot finely or grate them. Grated beetroots will cook faster than the chopped ones. Also it would be more appealing to kids.
Remove the skin and grate beetroot. Prepare all other ingredients.
Heat oil in a pan. Add mustard seeds, dry red chilies and urad dal to it. Once the seeds start spluttering add the curry leaves and onions. Saute till onions turn translucent.
Add the turmeric powder and stir well.
It's time to add the grated beetroot into the pan.
Stir well until the raw smell disappears and the beetroot starts to shrink. Cover and cook for 4-5 minutes in low flame until it is cooked. Stir Occasionally.
Finally add salt to taste and fresh grated coconut. Give it a quick stir.
Our healthy and colorful Beetroot Thoran is ready to be served. Enjoy with hot steamed rice and Sambar.
Conclusion
Do not add water,just sprinkle if needed and cook covered to avoid the beetroot becoming mushy.
