Mirchi Bajji Recipe or Andhra Style Stuffed Chilli Bajji is the most popular street style food of South India. It is also enjoyed all over India. These delicious Stuffed Chilli Bajjis are also known as Mirapakaya Bajji in Andhra, Milagai Bajji in Tamil Nadu and Mulaku Bajji in Kerala. It is a well known street food there and also a perfect tea time chaat / snack. This crispy and spicy Mirchi Bajji is served in most of the office pantries, road side shops, tea stalls, and almost all restaurants.
This is an all-time favourite snack usually served with chutneys like coconut chutney, coriander chutney, tomato chutney, etc. Mirchi Bajji Recipe or Andhra Style Stuffed Chilli Bajji is made using long green chillies called Bullhorn chillies. They are deep fried fritters which is stuffed with either a sweet & tangy tamarind paste or spiced potato stuffing. They are then coated with thick besan batter before frying. This perfect evening tea-time snack goes well with a hot cup of tea or coffee in monsoon.
The stuffing in the chillies is an important part of the recipe which gives a flavor to the chillies. There are many variations in stuffed mirchi bajji like potato stuffed, paneer stuffed are a few to name. They can be made in various ways. But here, I shall show the typical and easy way of making the stuffing which is commonly used in Hyderabad streets. Please always use the larger variety of green chillies while making Mirchi Bajji which are not at all spicy. Also do remember to remove the seeds and pith. If the seeds and pith are not removed then the chillies can taste spicy and pungent.
Clean the Long chillies and pat with dry cloth. Slit in the middle and remove the seeds.
Mix all the ingredients listed under *Batter Ingredients - besan, rice flour, red chilli powder, cooking soda, salt, ajwain, oil in a bowl.
Add water little by little to form a smooth thick batter.
Then take the tamarind paste and add cumin seeds then mix well. Now stuff this mixture into the mirchi using spoon and keep it aside.
Heat Oil in a deep frying pan over medium heat. When oil is hot, dip the stuffed mirchi into the batter and drop it gently into the hot oil. Fry in medium heat for 30 secs on each side. Then fry in high flame for making it crisp.
Remove the bajji using slotted spoon and let the excess oil drain on kitchen paper towels. Fry the remaining chilli bajjis in a similar manner.
Mix together finely chopped onion, coriander leaves, black salt, chaat masala and lemon juice.
Now slit the fried stuffed mirchi bajji in middle with knife and stuff the above onion masala using spoon or hands.
Yummy and Tasty stuffed Mirchi Bajji is ready to be served with hot tea. Enjoy!!!
Conclusion
Stuffing the Mirchi bajji is purely optional. You can just dip the chili in the batter and deep fry it. Peanuts can also be added to the stuffing. It gives an extra crunch.
