Always use a new clean wooden spoon to stir or mix. Don't use the spoons that use for making curries. Always use clean and sterilized, dry glass jar or ceramic containers.
Keep all the ingredients ready. The pineapple should be ripen enough otherwise the wine would turn bitter. The water should be boiled and cooled completely to room temperature. Also sterilize and dry the utensils, spoons and ceramic jars thoroughly.
Wash the pineapple thoroughly and dry it. Then chop the pineapple into small pieces. There is no need to discard any part including the skin and center core. Transfer the chopped pineapple pieces into the ceramic jar.
Next add the sugar, yeast and whole wheat into the jar.
Finally add the boiled and cooled water into the ceramic jar and mix them well with the help of wooded spoon. Avoid using plastic or metal spoon for stirring. Close the lid and cover it with a cloth and tie it with a rope.
Stir the wine daily for 21 days preferably at a same time and avoid stirring in the afternoons. If by chance, your pineapple has some of its bitterness, you can back-sweeten the wine by adding in 200 grams or 250 grams of sugar. But you should do this within first week and not later.
On the 22nd day filter the wine using a strainer and muslin cloth. Squeeze them tightly to extract maximum wine.
Transfer the wine back into the cleaned jar and allow it to sit undisturbed for 2 weeks for aging. The wine should be kept in dark place away from light.
Now the wine is ready to be transferred into clean sterilized bottles. Enjoy!!
Conclusion
