Directions
Do not use plastic or metal containers. Use only wooden spoon for stirring. Also sterilize everything in hot water before using.
Keep all the ingredients ready. The water should be boiled and cooled completely to room temperature.
Peel off the skin of the banana and chop them into small pieces. If the bananas are over ripen then cut off both the corners and then cut them into small pieces. The knife and the container should be well sterilized and dry.
Transfer the bananas into a dry and sterilized ceramic container. Now gently add the sugar to it. If you are making in large quantities then add the banana and sugar in layers.
Now add the dry instant yeast and boiled and cooled water into the ceramic jar.
With a clean and dry wooden spoon mix them thoroughly. Avoid using plastic and metallic spoon for stirring. The ceramic container should be filled only to 3/4th, giving enough space for fermentation. Close the container and cover it with a cloth and tie it with a rope. Store it in a cool, dry and dark place.
Stir the wine everyday for 10 days at the same time. Its ideal to stir the wine in the mornings and evenings. Avoid stirring in the afternoon as it attracts ants and other insects.
On the 11th day our wine should be ready. By now we start to get the intoxicating smell of wine!! Using a muslin cloth filter the banana wine. Squeeze out completely using clean hands.
Then transfer the wine into dry sterilized glass bottles. Store them in dry and dark place. Liquid will look cloudy now. If you keep the bottle undisturbed for 2-3 weeks the banana wine will be clear and ready to serve. Enjoy!!
Conclusion
Always use boiled and cooled water to make wine. Use wooden spoon to stir the wine and try to stir at a set time every day. Always keep in a dark cool place for ageing.
