In this blog, we will see how to cook tasty and healthy carrot beans poriyal.
“Carrot beans poriyal”, “carrot beans thoran” or “carrot beans stir-fry” is a South Indian stir fry recipe prepared with carrots, beans and fresh coconut. It is finally tempered with a few spices to give completeness. This simple stir fry is not only easy to cook but it is good way to comsume carrot and beans in a tasty and healthy way.
This poriyal goes well with plain white rice and curry. In fact, if you are looking for a healthy option, it can also be served with roti, in the form of a wrap for kids.
Eating carrots helps to reduced cholesterol, prevention from heart attacks. Carrots are one of the most widely used and enjoyed vegetables in the world. Beans are high in antioxidants, fiber, protein, B vitamins, iron, magnesium, potassium, copper and zinc. Eating beans regularly may decrease the risk of diabetes, heart disease, colorectal cancer and helps with weight management.

Directions
Serve the Carrot Beans Poriyal along with Sambar and Steamed Rice for a traditional South Indian lunch. Poriyal can be packed into kids lunch box as well, along with Roti.
Wash and Clean the vegetables as shown in the picture.
Finely chop the carrot and beans. Then chop the onion, garlic and green chilies. I have used a chopper to cut the veggies. You can also cut it with knife.
Heat oil in a kadai and add mustard seeds. Once they start to splutter add urad dal, red chilies and curry leaves.
Next add the chopped onion, garlic and green chilies. Sauté them for a minute.
Once the onions turn transparent add the chopped carrot and beans into the kadai. Stir them very well for a minute. Cover and cook them for 8 - 10 minutes stirring occasionally.
When the vegetables are cooked add salt to taste. Finally add freshly grated coconut and give them a nice stir. Then switch off the flame.
The simple and humble Poriyal is ready to be served with Rice. Enjoy!!
Conclusion
Do not over cook the vegetables. The natural crunch and texture should be retained. Adding coconut is optional but the flavor is enhanced with the addition.
