Eggs are almost everyone’s favorites. They are so versatile that there are endless meals you can cook with them. Not only eggs provide you with your daily protein requirements they also taste very delicious. They’re a great way to start the day with a healthy and filling meal, especially if you’re always in a hurry.
It is an Easy Egg Breakfast Recipe. If you like any and everything about egg then you are definitely going to like this Anda Appe / Egg Bites recipe. It is very easy to make and extremely delicious.
Egg bites / Egg Paniyaram can be made in just 10 minutes and your kids will love it. You can serve it as breakfast or as a snack or you can even give it to your kids as the lunch box recipe and just evening snacks. They have veggies and cheese, if you like. The cheese in this recipe is totally optional but it adds lot of fun to this dish. You can also add any vegetables that you have in your pantry in your refrigerator.
You can make this wonderful bite-sized small meal for your kids with eggs, which is tasty as well as healthy. Whatever you like in your eggs you can pretty much throw in Anda Appe / Egg Bites . These Egg Bites are also called ‘Egg Appe’ because it cooked in Appe Pan. There are tiny, round egg balls that will grab your kids’ attention.

You are going to love these amazing Egg bites, they are perfect for that hunger pangs, or just a grab and go breakfast. Yes, it is a really simple recipe but one that is handy regardless.
Finely chop all the vegetables and keep them aside.
Heat little oil in a pan / kadai. Add finely chopped onions and green chilies and sauté them until translucent.
Then add finely chopped potato and carrot and give it a quick stir. Cover and cook until its just done.
Once the they are cooked add the finely chopped capsicum and sauté.
Now its time to add the dry spice powders i.e chili powder, coriander powder, turmeric powder and garam masala. Mix well until raw smell disappears.
Finally add the chopped coriander leaves and check for salt. Switch off the flame and allow the mixture to cool completely.
Now crack open the four eggs
Add salt and pepper powder and beat well.
Now add the cooled vegetable mixture and mix well.
Heat the appe pan and add oil. When the oil gets hot, lower the flame and pour the egg mixture into the appe pan. At this stage you may add a small piece of cheese.
Cover and cook the Egg bites in low flame for 3 minutes. Then turn the egg bites.
Continue cooking for another minute.
Healthy and delicious Egg bites are ready to be served. Enjoy them when hot.
Conclusion
Tips: Add the vegetable mixture to the egg only after the mixture is completely cooled down. Do not over fill the appe cavities with the egg mixture.
