Thrissur Style Aviyal Recipe is a traditional dish of the Kerala Cuisine served as a accompaniment to rice. It also takes a major part in the Onam Sadya feast. Aviyal is typically made with assorted vegetables such as raw banana, white pumpkin, beans, drumstick, carrot, yellow pumpkin and yam. This recipe is healthy and quick to make at home.
Every Aviyal recipe has many variations within Kerala. Thrissur Aviyal Recipe is slightly different from the normal aviyal. The difference is the addition of shallots while grinding coconut. This special flavorful recipe is a thick mixture of different vegetables,curd and coconut, seasoned with coconut oil and curry leaves.
This aviyal also made in certain parts of Tamil Nadu and Udupi. But now are going to see Thrissur Style Easy Aviyal. Have it hot steaming rice along with Thrissur style sambar and papadum.

Directions
The way of cutting the vegetables plays a major role in the texture and taste of aviyal. So please follow the directions carefully. Let's get started.
To begin making the Thrissur Style Aviyal Recipe, it’s important to cut the vegetables in similar length and size for even cooking. The vegetables are cut into 3″ long pieces.
Heat a wide and deep pan, and add two teaspoon of coconut oil. Once heated add all the chopped vegetables.
To this add the turmeric powder and chilli powder.
Give it a quick stir, Cover and cook the aviyal in low flame. Check every two three minutes whether the vegetables are cooked. We do not want the vegetables to be over cooked.
Meanwhile we will make the coconut base for the Aviyal. To do this, place the coconut, green chilies, cumin seeds and shallots into the mixer. Give it a quick pulse. Do not blend it to a smooth paste. we just need a coarse mix.
Add the coarsly ground coconut mixture on top of the cooked vegetables along with requirement amount of salt.
Add one sprig of curry leaves and mix it well till all gets well coated. Now cover it with a the lid and heat it for 3 minutes in low flame. Take care not to mash the vegetables.
Add the whisked yogurt and a teaspoon of coconut oil and give the Thrissur Aviyal a stir. Adjust the salt to suit your taste. Switch off the flame now.
Finall add some fresh curry leaves and give it a quick stir. Our Thrissur Style Easy Aviyal is ready to be served. Enjoy with steamed rice or chappati.
Conclusion
You can substitute yogurt with raw mango. We generally use the same list of vegetables but you can be pretty flexible as you can use whatever veggies you have available at hand.
