Aval Payasam is a popular dessert recipe in Kerala cuisine. It is served with Onam Sadya or for any festival / auspicious occasions. Aval means flattened rice/beaten rice/ rice flakes and Aval Payasam means rice flakes cooked in sweetened milk. Aval Payasam recipe is one of the quick and easy payasam and also very delicious. It can be served as a after meal dessert as it is very light.
The preparation method is quite similar to making other payasams except for the main ingredient. We can prepare this using sugar but I usually prefer jaggery to sugar as it is rich in iron and is also a healthier option than sugar.

With Ganesh Chaturthi and Onam round the corner, do try this simple yet delicious payasam and enjoy with your family.
Take all the ingredients listed. Boil the milk and allow it to cool.
Then prepare the jaggery syrup by melting the jaggery in water. Keep the flame in medium low. When the jaggery completely dissolves switch off the flame. Strain it to remove impurities.
Take a deep bottomed pan, add two tablespoons of ghee. Once heated fry the cashew nuts first followed by the raisins. Keep them aside.
In the remaining ghee, roast the rice flakes or Aval in low flame until golden color.
Now its time to add boiled cool milk into the pan. Cook Aval in medium flame for about 5-8 minutes stirring occasionally until the Aval softens.
Once the Aval is cooked, pour the jaggery syrup into the payasam and keep stirring for 2-3 minutes.
Finally add the fried nuts and cardamon powder and switch off the flame.
Our yummy Aval Payasam is ready to be served.
Conclusion
Cooking time of the Aval/rice flakes varies depending on the type you chose. Jaggery should be cooled completely before adding to the milk. Otherwise the milk might curdle.
